These little goodies made my afternoon yesterday. They’re warm and have a bit of crunch on the outside – they remind me a little bit of falafels, but with a very different flavor. haha. So, I guess, not like falafels. They’re really easy and so good for you: vegan and protein rich. :)

I really liked mine served with a dab of herbed mayo, but I suppose that makes them un-vegan so please feel free to experiment.

Pumpkin Chickpea Fritters

What you’ll need: One can of chickpeas, about one third of a can of pure pumpkin puree (use the smaller can, the same size as the chickpeas), one quarter cup of hemp seeds, three teaspoons of apple cider vinegar, two teaspoons of flour, panko bread crumbs, olive oil, salt and pepper

What to do: Mash up the drained garbanzo beans and pumpkin puree with a fork until well crushed. Some larger pieces of garbanzo bean is totally fine and will add texture to your fritters. Mix in the hemp seeds, apple cider vinegar, and salt and pepper. For the salt and pepper, you don’t need much. A generous sprinkle is fine. Add the flour and mix well.

With your hands, portion off fritter sized pieces and flatten them into a circle. Coat in bread crumbs and fry on the stove top in the olive oil. Serve hot. Also delicious heated up in the toaster oven the next morning :)
