I have a confession about this bread: it’s actually cake. Okay, so it’s not actually cake, but it tastes as good as cake and that’s good enough for me! :) It’s also really super easy to make, just like regular banana bread. I used apple sauce to cut down the amount of butter and it makes the cake, er, bread, dense and moist, which is just the way I like it. The browned butter gives the flavor richness, which is amazing.
Ingredients -
Three very ripe bananas, smooshed with a fork
Three quarters of a stick of butter
1 1/2 cups flour
1/2 cup sugar
1 1/2 tsp. baking powder
1/2 cup unsweetened apple sauce
1 egg
Chocolate chips
Directions –
Preheat oven to 325 degrees Fahrenheit. Grease and flour your bread loaf pan. Melt and brown your butter in a pan (on low). Mix all ingredients together (including melted butter). Add chocolate chips to taste. Pour into loaf pan and cook for an hour an a half to two hours, depending on your oven. The top should be toasty and the inside dense and moist. :)
When cooked, let cool for ten minutes in the pan before popping it out to cool on a rack. You can enjoy a slice right away or let it cool completely for later!
