I can’t get enough of tomatillos. I love the tang. I love the color. And I love that I can eat tomatillo salsa with chips or tacos or burritos or, seriously, anything. Plus, this recipe is super easy and nice and healthy (beat that).

And that’s all I need to say. Make this!

p.s. I was inspired by this recipe from Food in Jars! I changed things around a bit, so it’s my own recipe, but I recommend checking out her post.

What you need – Bag of fresh tomatillos, one red onion, cilantro (a small handful, cut up), salt (a few pinches), one head of garlic

What to do – Preheat oven to 425 degrees Fahrenheit. Take the skirts ( ;)  ) off of the tomatillos and cut them in half. Place them face up on your baking tray. Slice your red onion and add it to the baking tray. Separate the garlic cloves and cut off the bottoms of each clove. Add them to the baking sheet.

Place the baking sheet in the oven and allow to cook for 30-45 minutes. Let the tray cool for 5-10 minutes and then squeeze the roasted garlic out of its skin.

Put the entire contents of the roasted tomatillos + garlic + onion tray and the salt and cilantro in a blender. Pulse until it looks like salsa – chunky, but fully mixed and ground up enough.

Serve sprinkled with a few leaves of cilantro.  :)
