My mother’s antipasto is amazing. No, seriously. It’s one of those dishes that we should make for more meals throughout the year, but don’t. The subject always comes up when we’re eating it: “We should have this for dinner sometime,” somebody says. And then we all nod and keep munching. And (just like some New Year’s Resolutions… have you been hearing enough about those recently??) then we don’t eat it for a long time… and end up saying the same thing next year.

It’s basically a pile of salad: Lettuce, balsamic vinaigrette (use your favorite recipe), picked mushrooms, salami and prosciutto, roasted red peppers, onion (thinly sliced), capers, olives (sliced), artichoke hearts, lupini beans (optional, but they’re the best ever), and parmesan cheese (chunks/slices).


’nuff said.
