These pops are seriously amazing, easy, decadent, & totally vegan. YUM!
Melt 3/4 cup of dark chocolate chips (I used Girard) until they’re mostly melted. Pour one can of coconut milk in to a large bowl (I used Thai Kitchen’s version of this) and whip on high to make sure the coconut milk is a consistent texture. Pour the melted chocolate chips in and whip until well mixed. (Whip is a generous term. The coconut milk does not change consistency with the whipping.)
When the mixture is well mixed, pour into popsicle molds. Push popsicle sticks part of the way in and freeze overnight or until solid. Run molds under warm water to loosen. Makes 6.5 popsicles & some of them will have amazing little chocolate chips in them. (Yum.)

They are my favorites because they make cute & well-formed molds, because you get to use wooden popsicle sticks, & because you can put the sticks in before they set and they’ll stay in the right place. :)
